No gourmand should consider serving a tray of cheeses without including at least one made from ewe's milk. In addition to their delicious flavor, cheeses made from sheep's milk are high in protein and contain less lactose than those made from cow's milk. Made by La Carlota del Monte, located in a farming community outside of Buenos Aires, Capilla is made only from pure sheep's milk originating from their own production. La Carlota del Monte only has Milchschaf sheep, a breed known for its production of rich milk. This cheese is very similar to Spanish Manchego.
